Sage, which is also known as Common Sage or Garden Sage, is a member of the mint family. Sage originates from the Mediterranean and Southern Europe and is now cultivated in many organic gardens worldwide. It is a subshrub, a type of perennial that develops woody stems and twigs that can be very long-lived.
The Romans considered Sage a sacred herb and they held elaborate ceremonies during harvesting time. The name Sage is derived from the Latin ‘salveo’, which means to heal, an appropriate name for this plant which is so highly regarded for its healing properties.
Sage grows to a height of about 60 to 90 centimeters (40 to 100 inches) and has a tendency to spread out. It has oblong, wooly, gray-green leaves that are lighter underneath and darker on top. Purple, blue flowers emerge at mid-summer.
Garden Sage grows best in warm and dry areas, but it grows well almost anywhere in ordinary garden soil; it thrives when shaded from sunshine to some extent. Sage should be harvested before flowering occurs.
